Cook Vegetarian magazine features Birgit’s legendary cooking in its latest issue.
Lots of caterers can put on an anodyne vegetarian spread (though some think fish are plants – see below), but how many can cater for vegans and allergy sufferers too – without compromising on taste?
The magazine comes out on 1 May 2009. Here’s what they wrote:-
When it comes to creating a vegetarian buffet spread, Birgit Kehrer knows her stuff. With 20 years of meat-free catering under her belt, plus 25 years as a dedicated ovo-lacto-vegetarian, she provides imaginative, flavoursome cuisine that always meets her own exacting ethical standards. Her veggie, healthy, sustainable menu goes down a storm even with die hard meat-eaters, and she does an innovative line of fish-free sushi, too.
“Some caterers go blank when asked for vegetarian food,” says Birgit. “I’m doing a big veggie wedding in Devon soon, and the groom is vegan. Another caterer put together a menu for them… with fish on it! I’ve got a long experience of being fully veggie myself and I’m good at fitting people’s needs.”
“I like a challenge,” Birgit laughs. “At one wedding there was a vegan guest with a gluten and soya allergy, and he could eat 80 percent of the food I prepared. None of the other 200 guests noticed!”
On the Menu:
- Birgit’s signature zuccata (an Italian inspired soufflé);
- Asparagus quiche;
- Spinach and feta strudel;
- Mediterranean roast potato salad with olives

A worthwhile project has been set up between vegetarian caterer Dr Birgit Kehrer of Bsustained and community groups such as SIFA Fireside and schools, which aims to help people learn more about healthy living Birgit runs shopping courses, demonstrating that it is possible to consume healthy food even on a very low budget. Gardening workshops called ‘Fork to Fork’ are available, allowing drop-in and residential members to grow their own vegetables in allotments – creating fresh ingredients they can cook up! According to Birgit, respecting nature can be a great tool in helping to heal social problems, as well as physical and mental issues. The ‘5 A Day On A Budget’ cookery classes give participants the opportunity to create delicious and wholesome meals from produce they’ve grown themselves, and demonstrate how a tasty, balanced diet can be cooked in just half an hour.
